Dhal
Perfect for breakfast, lunch, and dinner, we love to meal prep this for the week. High in fibre, protein, and anti-inflammatory spices this is one to save for stable blood sugars and a healthy gut microbiome. It’s a one pot, super quick and easy staple for those that don’t like to cook but are trying to increase their diet diversity, as well as being a cosy dish for those who love home-made meals.
Ingredients:
➔ 1 onion, diced
➔ 2 cans of diced tomatoes
➔ 1 can of coconut milk
➔ 4 cups of water
➔ 6 garlic cloves, minced
➔ Spices: 3-4tsps ground turmeric, 1 tsp cinnamon, 2tsps paprika, 2-3tsps mustard seeds, chilli, salt & pepper to taste.
➔ Knob of ginger, grated.
➔ Lime or lemon to serve.
Method:
1. Sauté onion until soft, add spices and stir constantly for 1-2 minutes until fragrant.
2. Add coconut milk, water, tomatoes, and lentils.
3. Simmer for 30-40 minutes, stirring frequently, until lentils soft. Serve with freshly squeezed lime or lemon.
